I follow the recipe to the exact grain of salt, but still it’s not a “wow, this is delicious” moment. That is until I discovered Heidi Swanson of 101 Cookbooks. I’ve tried several of the recipes and each time, delicious!
I wanted to post this cookie recipe that I discovered on her site, Nikki’s Healthy Cookie Recipe. The only sugar comes from the chocolate chips and I’ve substituted some ingredients to make them gluten-free.
I’ve used Gluten-free All Purpose Baking Flour for the Almond Meal (a little to $$) and found gluten-free oats. Super easy to make, yummy and healthy!
